Recipe For Product Pindos Grasslands Light 10% Fat

Courgette rolls with Feta cheese

Ingredients

  • 4 small courgettes, ends chopped off
  • 3-4 tbsps olive oil & extra for drizzling
  • 250g Pindos Grasslands Light cheese
  • Lemon juice
  • A handful of rocket leaves, chopped
  • Salt & pepper

Execution

  1. Chop the courgettes into long, thin slices lengthways.
  2. Drizzle two large platters with olive oil and lemon, and spread out the courgette slices, making sure they don’t overlap.
  3. Heat a non-stick frying pan thoroughly, and cook the courgette slices for 1 minute on each side.
  4. Transfer the slices to the platters, again making sure they don’t overlap.
  5. Mix the cheese with the lemon juice and season to taste.
  6. Add the rocket and mix.
  7. Place 1 tsp of the cheese mixture on one end of each marinated courgette slice and roll up tightly.
  8. Repeat the process with the remaining courgette slices until all of the mixture is used up.
  9. Arrange the rolls on a serving dish and serve.
